Okay, friends! I promise I haven’t been neglectful this week. I vaguely remember mentioning a new recipe I’ve been loving in a recent post, and tonight, I’m finally sharing it with you.

But first, let’s be honest—recipe blogs can be a little lazy, right? Not much thought goes into them… which is exactly why you’re getting one from me tonight. It has been a long day, I’m exhausted, and I’m not feeling great.

A Little Travel, A Lot of Energy

My sister, nieces, and I made the drive down to Nampa today for the State Cheer competition. The excitement level in this hotel room? Off the charts. My older nieces were absolutely enthralled, declaring this the nicest hotel they’ve ever stayed in.

Right now, I’m hanging out in our apparently fabulous room with my three-year-old niece while the older two are at the pool with their mom. Lucky for them, they’re sharing the pool with the cheer team. Hopefully, that burns off enough of their energy from the drive so they actually sleep tonight.

A Quick, Hearty Keto Meal

Alright, onto the good stuff! This recipe has quickly become one of my new favorites. It’s simple, quick, and so good. Perfect for when you need a filling meal but don’t have the energy for anything complicated.

I have no idea what to call it, so let’s just dive in..

What You Need

  • 1 to 2 pounds of ground beef (cow, if you will)
  • Mushrooms (I cheat and buy the pre-washed, pre-sliced ones because I hate washing them)
  • 1 small carton of heavy cream
  • Shredded parmesan cheese
  • Your favorite seasonings (I’ve been loving coriander lately, but I also use salt, pepper, granulated garlic, and granulated onion)

How to Make It

  1. Brown the ground beef—I like to cook it really well, almost crispy.
  2. Drain the grease, then toss in the mushrooms. Stir occasionally and let them cook until they’re done to your liking.
  3. Once the mushrooms and beef are ready, turn the heat down to medium-low and slowly stir in the heavy cream.
  4. Let the cream warm up while stirring occasionally, then add in the shredded parmesan.
  5. Keep stirring until the cheese melts and the sauce thickens into creamy deliciousness.

I’ve been serving this over riced cauliflower for a keto-friendly option, but the rest of the household gets mashed potatoes. Either way—dieting or not, this is a meal worth trying!

A Slight Interruption… and a New Night

Confession time: this is actually a new night. I got to the part where I was ready to share the ingredients, and then my sister and the girls got back from the pool. They weren’t being obnoxious, just distracting. So, instead of finishing, I got caught up in the chaos and didn’t get back to writing until now—twenty-four hours later.

Rather than pushing through and driving all the way home, we petered out. We stopped for Chinese food, and you know how that goes. Ten bites in, you’re stuffed, slightly regretting life choices, but also somehow hungry again an hour later. The girls were done driving, so here we are, about halfway home, in another motel. My sister and the girls are swimming, and I’m here, wrapping up this blog before I go down to join them.

Cheer Update

Our team didn’t place at State, but they had fun performing, and they were stoked just to be there. They went up against teams three times their size, and they held their own! I’m hopeful they’ll make it again next year, and I—along with all the other cheer parents—will be there cheering them on every step of the way.

For now, it’s off to the pool.
